Grilled Corn Salad:  Ensalada de Elote Asado

Hispanic Heritage Month started on September 15.  Corn is the star of a recipe for "Grilled Corn Salad".  It comes with a story of a pre- Hispanic Zapotecan woman named Abigail Mendoza.  She is a cook, restaurateur and teacher who “feels her ancestors” (native people from before the Spanish conquest) present when she prepares food.


Pico de Gallo and Befriending Beans

The Season of Creation (Sept. 1 – Oct. 4) celebrates God’s abundance and reminds us to live in right relationship with creation. Befriending beans, a basic plant-based protein, connects us with many food cultures that rely on legumes for inexpensive, healthy and tasty food traditions. Pico de Gallo (peek’ o  dee  guy’ o) is a fresh Hispanic bean dish for the Season of Creation table!
